You can install Vista Ultimate 32bit in a 8GB partition, since I myself installed it, and later remove the pagefile to other partition.

There is no such thing as a separate version of Media Center containing only media center and then slipstreaming it with XP SP2 to make it MCE.
IMO MCE is just marketing stuffs from Microsoft, there's nothing in MCE that you cannot do it XP Pro SP2, infact Xp pro SP2 is better than MCE.
