Good Biztalk 2006 Books or Sources

Anyone have any good documentation (reference book) that talks about creating
custom adapters/pipelines that is easy to understand?

Probably the best source of information on both is the biztalk documentation
itself and the samples in the biztalk SDK. Pipeline components are certainly
simpler (and better documented) than adapters, but the information is there,
certainly.
